Cognac Cask Finish
Cask Origin: Charente, France. Cognac is twice-distilled in copper pot stills, making it a perfect match for the Casa Barú pot-still profile. Well-aged Cognac develops notes of figs, concentrated prunes, sandalwood, and cedar.
The Finish: A subtle but distinguished layer of old French oak that enhances complexity.
Tasting Notes:
Nose: Distinguished aromas of concentrated prunes, figs, and dried apricots. Notes of sandalwood and eucalyptus add an exotic lift.
Palate: Refined and mature. Silky mouthfeel with layers of dried fruit, oak spice, and a long, gentle finish of tobacco and tea.

Ex-Rye Cask Finish
Cask Origin: USA. Rye Whiskey imparts spicy, dry, and sharp characteristics.
The Finish: A bold finish that introduces peppery, vibrant notes, providing structure and dryness.
Tasting Notes:
Nose: Assertive cracked pepper, baking spices (nutmeg/vanilla), and wood smoke. The sugarcane/fruit base provides necessary balance.
Palate: Sharp and full-bodied. Dominant notes of spice and pepper, giving way to toffee, wood char, and a long, complex, dry finish.

Ruby Port Cask Finish
Cask Origin: Douro Valley, Portugal. Ruby Port is a young, vibrant fortified wine, focused on vibrant color and primary fruit character.
The Finish: A shorter, intense finish designed to saturate the rum with bold fruit and color.
Tasting Notes:
Nose: Concentrated black cherry, plum compote, and sweet spice. The rum's pot-still fruit notes gain depth and ripeness.
Palate: Bold and juicy. Dominated by dark berries and sweet spice, with a smooth, velvety texture and a finish of soft tannins.
