We embrace a philosophy that rests on three pillars:

The heart of Casa Barú lies in our raw material: artisanal sugarcane syrup sourced directly from small independent farmers in the highlands of Chiriquí. This noble cane, grown in volcanic soil and fed by mountain rains, gives a distinct, fruity, and complex soul to every drop—a flavor profile dramatically different from industrial molasses-based rums.

The Pot Still: Our rum is double-distilled in copper pot stills, a process usually reserved for single malt Scotch, to retain the full, complex character of our special fermentation.

The Finish: Our aged rums begin their life in fresh ex-Bourbon casks before receiving secondary maturation in carefully selected specialty casks (like Sherry, Cognac, and Rye) for not less than one year. This creates the unique complexity collectors crave.
