The Base Spirit: Our rum is double-distilled in copper pot stills (like single malt Scotch) to preserve a high level of esters and character, yielding a base that is naturally fruity and citrusy from the artisanal sugarcane syrup we use in fermentation. After initial maturation in fresh ex-Bourbon casks (adding vanilla and body), each rum spent a minimum of 12 months in these specialty casks.
